Ingredients
2 cups powdered sugar
1.5 tablespoons unsalted butter, softened
2 tablespoons heavy cream
0.5 teaspoon peppermint extract
0.25 teaspoon vanilla extract
1 pinch salt
10 oz semi-sweet chocolate chips or melting wafers
1 teaspoon coconut oil (optional)
Instructions
1. In a mixing bowl, combine powdered sugar, softened butter, heavy cream, peppermint extract, vanilla, and a pinch of salt. Mix until a smooth, firm dough forms.
2. Roll the dough into 1-inch balls, flatten into discs, and place on a parchment-lined baking sheet. Freeze for 20 minutes.
3. Melt the chocolate chips with coconut oil (if using) in the microwave, stirring every 30 seconds until smooth.
4. Dip each peppermint disc in chocolate, letting excess drip off. Place back on parchment and chill until set.
Notes
Chill the filling before dipping to avoid stickiness.
Coconut oil gives a shinier chocolate finish.
Store patties in the fridge or freezer for best texture.
