Description

This crisp and vibrant Honeycrisp Apple and Feta Salad is a refreshing medley of sweet apples, creamy feta, and crunchy pecans tossed in a tangy vinaigrette. Perfect for fall gatherings, light lunches, or as a side for dinner.


Ingredients

2 large Honeycrisp apples, thinly sliced

6 cups mixed greens

0.5 cup crumbled feta cheese

0.33 cup toasted pecans

0.25 red onion, thinly sliced

0.33 cup dried cranberries (optional)

2 tablespoons extra virgin olive oil

1 tablespoon apple cider vinegar

1 teaspoon Dijon mustard

Salt and freshly ground black pepper, to taste


Instructions

1. In a small bowl or jar, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper. Set aside.

2. Slice the apples and red onion. Toast pecans in a skillet over medium heat for 3–4 minutes. Let cool.

3. In a large bowl, combine mixed greens, apple slices, red onion, cranberries (optional), toasted pecans, and crumbled feta.

4. Drizzle vinaigrette over the salad just before serving and toss gently. Serve immediately.

Notes

Use lemon juice on apples to prevent browning.

Add grilled chicken for extra protein.

Substitute goat cheese or blue cheese for a different flavor profile.
