Description

Ingredients
1 cup yellow cornmeal (medium grind)
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 tablespoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup finely chopped onion
3/4 cup buttermilk
1 large egg
Vegetable oil for frying
Instructions
1. In a large mixing bowl, whisk together cornmeal, flour, baking powder, baking soda, sugar, salt, and pepper. Stir in chopped onion.
2. In a separate bowl, whisk together buttermilk and egg. Combine with dry ingredients and stir until just mixed.
3. Heat vegetable oil in a deep pot to 350°F.
4. Using a spoon or cookie scoop, drop tablespoon-sized batter balls into oil. Fry in batches for 2–3 minutes per side until golden.
5. Remove with a slotted spoon and drain on paper towels.
6. Serve warm with dipping sauces or as a side to seafood or barbecue.
Notes
Use medium-grind yellow cornmeal for authentic texture.
Don’t overmix the batter—a few lumps are fine.
For spicier hush puppies, add minced jalapeños or cayenne pepper.
