Ingredients
1 refrigerated pie crust (or homemade, if preferred)
1/2 cup unsalted butter, melted
3/4 cup brown sugar
1/2 cup light corn syrup
2 eggs
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup chopped pecans
1/2 cup whole pecans for topping
Instructions
- Prepare the crust: Preheat your oven to 350°F (175°C). Roll out the pie crust on a lightly floured surface and use a round cutter (about 2.5 inches) to cut out circles. Gently press each circle into a greased mini muffin tin to form small cups.
- Make the filling: In a medium bowl, whisk together the melted butter, brown sugar, corn syrup, eggs, vanilla extract, and salt until smooth. Stir in the chopped pecans.
- Fill the crusts: Spoon about 1 tablespoon of the pecan filling into each pie crust cup. Be careful not to overfill. Place a few whole pecans on top for extra crunch.
- Bake: Bake for 18-22 minutes, or until the filling is set and the crust is golden brown.
- Cool and serve: Let the bites cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely. Serve warm or at room temperature.
