Description
Italian Wedding Soup is a comforting, hearty blend of tender chicken meatballs, tiny pasta, and leafy greens simmered in a savory broth. Perfect for chilly days or cozy dinners, this Italian-American favorite warms from the inside out.
Ingredients
1 lb ground chicken or pork
1/3 cup breadcrumbs
1/4 cup grated Parmesan
1 egg
1 clove garlic, minced
1 tsp Italian seasoning
Salt and pepper to taste
1 tbsp olive oil
1 small onion, chopped
2 carrots, diced
2 stalks celery, diced
8 cups chicken broth
3/4 cup acini di pepe pasta
5 oz baby spinach or escarole, chopped
Salt and pepper to taste
Extra grated Parmesan for serving
Instructions
1. In a large bowl, combine ground meat, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Shape into 3/4-inch balls and chill.
2. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté until softened, about 5-6 minutes.
3. Pour in chicken broth and bring to a boil. Add meatballs and simmer for 10 minutes.
4. Stir in acini di pepe. Cook for another 10 minutes until pasta and meatballs are done.
5. Add chopped spinach and cook for 2-3 minutes until wilted. Season with salt and pepper.
6. Serve hot with a sprinkle of Parmesan.
Notes
If freezing, cook the pasta separately and combine when reheating to prevent sogginess.
Ground turkey or beef also works well for the meatballs.
For a vegetarian version, use white beans and vegetable broth.
