These Jalapeno Popper Egg Rolls wrap everything you love about spicy, cheesy jalapeno poppers into a crispy golden egg roll shell. Packed with cream cheese, cheddar, bacon, and a kick of jalapeno, they’re the ultimate appetizer or party snack.
Ingredients
8 oz cream cheese
1 cup shredded cheddar cheese
4 jalapenos, seeded and finely diced
6 slices cooked bacon, crumbled
1/2 tsp garlic powder
12 egg roll wrappers
1 small bowl water
oil for frying
Instructions
1. In a medium bowl, combine softened cream cheese, cheddar cheese, jalapenos, crumbled bacon, and garlic powder. Mix until smooth.
2. Lay an egg roll wrapper like a diamond. Add 2 tablespoons of filling to the center.
3. Fold the bottom corner up over the filling, then fold in the sides and roll tightly. Moisten the top corner with water to seal.
4. Heat oil to 350°F. Fry 3–4 rolls at a time for 3–4 minutes or until golden and crispy. Drain on paper towels.
5. Serve hot with ranch, chipotle mayo, or your favorite dipping sauce.
Notes
Use gloves when handling jalapenos to avoid skin irritation.
Make-ahead friendly: prep and refrigerate raw rolls up to 24 hours.
Baking option: brush with oil and bake at 400°F for 15–18 minutes.
