Ingredients
1 cup peanut butter
1/2 cup butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
1. Cream together the peanut butter, butter, granulated sugar, and brown sugar until smooth and fluffy.
2. Add the egg and vanilla extract. Mix just until combined.
3. In another bowl, whisk the flour, baking soda, and salt. Gradually add to the wet mixture.
4. Roll dough into 1-inch balls. Flatten each with a fork in a criss-cross pattern. Chill for 30 minutes.
5. Preheat oven to 350°F (175°C). Bake for 10–12 minutes. Let cool before transferring to a rack.
