Ingredients
4 boneless, skinless chicken breasts
1/4 cup olive oil
3 tablespoons fresh lemon juice
3 garlic cloves, minced
1 tablespoon Dijon mustard
1 teaspoon honey
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Instructions
1. In a medium bowl, whisk together olive oil, lemon juice, garlic, Dijon mustard, honey, oregano, paprika, salt, and pepper.
2. Place chicken breasts in a zip-top bag or shallow dish and pour the marinade over. Refrigerate for 30 minutes to 4 hours.
3. Preheat grill to medium-high heat and lightly oil the grates.
4. Remove chicken from marinade and let excess drip off. Grill 6-7 minutes per side or until internal temperature reaches 165°F.
5. Rest chicken for 5 minutes before slicing and serving.
