These juicy grilled salmon gyros are wrapped in warm pita and topped with a tangy dill yogurt sauce, fresh cucumber, cherry tomatoes, and red onion. It’s a quick Mediterranean-inspired meal perfect for summer evenings or casual entertaining.
Ingredients
1 lb salmon fillets, skin-on
2 tbsp olive oil
1 tbsp lemon juice
1 tsp dried oregano
0.5 tsp garlic powder
Salt and black pepper to taste
4 pita breads or flatbreads
1 cup cherry tomatoes, halved
1 cup cucumber, thinly sliced
0.25 red onion, thinly sliced
1 cup Greek yogurt
1 tbsp fresh dill, chopped
1 tbsp lemon juice
1 tsp garlic, minced
Salt to taste
Instructions
1. In a bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Rub the marinade onto the salmon and let it sit for at least 10 minutes while the grill preheats.
2. In a small bowl, whisk together Greek yogurt, chopped dill, lemon juice, garlic, and salt. Chill in the refrigerator while the salmon cooks.
3. Heat the grill to medium-high. Place salmon skin-side down and grill for 4-5 minutes per side or until it flakes easily with a fork. Remove and let rest for a few minutes.
4. Warm pita bread on the grill or a skillet. Flake the salmon into chunks, then layer it onto the pita with cucumbers, tomatoes, red onion, and a generous dollop of dill yogurt sauce.

Let the salmon rest for a few minutes before flaking to keep it juicy.
