Ingredients
1 lb ground turkey (85-93% lean)
0.25 cup finely grated onion
3 cloves garlic, minced
0.25 cup chopped fresh parsley
2 tbsp chopped fresh mint
1 tsp ground cumin
1 tsp ground coriander
0.5 tsp smoked paprika
0.25 tsp cinnamon
0.25 tsp chili flakes (optional)
1 tsp salt
0.5 tsp black pepper
1 tbsp olive oil
Bamboo skewers soaked in water for 30 minutes
Instructions
1. In a large bowl, mix together turkey, onion, garlic, herbs, spices, salt, pepper, and olive oil until just combined.
2. Divide the mixture into 8 parts and shape each around a bamboo skewer.
3. Chill koftas for 20 minutes in the fridge to firm up.
4. Preheat grill to medium-high and oil the grates lightly. Grill skewers 4–5 minutes per side until cooked and charred.
5. Serve hot with pita, salad, or sauces like tzatziki or garlic yogurt dip.
Notes
Use ground turkey with some fat to keep kofta juicy.
Chill the skewers before grilling to prevent breakage.
