Ingredients

500g chicken thighs

2 tablespoons lemon juice

1 tablespoon Cajun seasoning

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

3 garlic cloves, minced

2 tablespoons butter

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons chopped fresh parsley

1 teaspoon fresh thyme leaves

300g pasta twists (rotini or fusilli)


Instructions

1. Cut chicken thighs into bite-sized pieces and toss with lemon juice, Cajun seasoning, salt, and black pepper. Let marinate for 20 minutes.

2. Heat olive oil in a skillet over medium-high heat. Sear marinated chicken until golden brown and cooked through. Set aside.

3. Cook pasta in salted water until al dente. Reserve 1/2 cup of pasta water before draining.

4. In the same skillet, melt butter and sauté minced garlic until fragrant. Add heavy cream and Parmesan, stirring until smooth. Add parsley and thyme.

5. Return chicken and pasta to skillet and mix until coated with Alfredo sauce. Add reserved pasta water as needed to loosen sauce.

6. Serve hot with extra herbs and a squeeze of lemon, if desired.
