Description

This Lemon Herb Quinoa with Chickpeas is a zesty, protein-packed vegetarian dish featuring fluffy quinoa, bright lemon, and fresh herbs. Ingredients

1 cup quinoa

2 cups water or vegetable broth

1 can (15 oz) chickpeas

2 tablespoons olive oil

Juice and zest of 1 lemon

1 clove garlic, minced

¼ teaspoon salt

¼ teaspoon black pepper

¼ cup chopped fresh parsley

2 tablespoons chopped fresh mint

2 tablespoons chopped green onions

Optional: crumbled feta, avocado, cherry tomatoes


Instructions

1. Bring rinsed quinoa and water or broth to a boil in a medium saucepan.

2. Reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed.

3. Remove from heat and let sit, covered, for 5 minutes, then fluff with a fork.

4. In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, salt, and pepper.

5. In a large bowl, combine quinoa, chickpeas, parsley, mint, and green onions.

6. Pour the dressing over the quinoa mixture and toss to coat.

7. Top with optional feta, avocado, or cherry tomatoes if using. Serve warm or chilled.

Notes

This salad gets better as it sits—ideal for meal prep.

Rinse your quinoa well to remove bitterness.
