Low Carb Crack Chicken Casserole is a cheesy, creamy, bacon-loaded dish that’s both satisfying and keto-friendly. Perfect for busy weeknights or meal prep, this casserole brings together classic comfort flavors with a low-carb twist.
Ingredients
3 cups shredded cooked chicken
8 oz cream cheese, softened
1/2 cup sour cream
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/4 cup chopped green onions
1/2 cup cooked and crumbled bacon
2 large eggs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Instructions
1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
2. In a large bowl, mix cream cheese, sour cream, eggs, garlic powder, onion powder, salt, and pepper until smooth.
3. Fold in the shredded chicken, cheddar, mozzarella, Parmesan, green onions, and half the bacon.
4. Transfer mixture to the baking dish. Top with remaining bacon and more cheese if desired.
5. Bake for 25–30 minutes or until hot and bubbly.
6. Let it rest 5–10 minutes before serving. Garnish with extra green onions if desired.
Notes
Make sure the cream cheese is fully softened for a smooth mixture.
You can substitute turkey for chicken or add chopped jalapeños for spice.
Broccoli or spinach can be mixed in for added veggies.
