A hearty, cheesy Low-Carb Ground Beef Zucchini Bake that’s perfect for keto and low-carb dinners. Layers of tender zucchini, savory ground beef, and melted cheese make this comforting casserole ideal for meal prep or a cozy family dinner.
Ingredients
1 lb ground beef
3 medium zucchinis sliced into thin rounds
1/2 onion finely chopped
2 cloves garlic minced
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup tomato sauce (sugar-free if needed)
1 tsp Italian seasoning
1/2 tsp smoked paprika
Salt and pepper to taste
Olive oil for cooking
Fresh parsley for garnish (optional)
Instructions
1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish and set aside.
2. Slice your zucchini into thin, even rounds.
3. In a skillet over medium heat, add olive oil and sauté onions until translucent. Add garlic and cook for 1 minute.
4. Add ground beef and cook until browned. Season with Italian seasoning, paprika, salt, and pepper.
5. Stir in tomato sauce and let simmer for 5 minutes.
6. Layer half of the zucchini in the baking dish, then top with half of the beef mixture and half of both cheeses.
7. Repeat with the remaining zucchini, beef, and cheese.
8. Cover with foil and bake for 20 minutes.
9. Remove foil and bake another 10–15 minutes until cheese is golden and bubbly.
10. Let cool for 5 minutes before serving. Garnish with fresh parsley if desired.
Notes
Let zucchini sit with salt to release excess moisture before baking.
You can substitute mozzarella or Monterey Jack for cheddar.
Great for freezing in single-serving portions.
