Description

Mac and Cheese Meatloaf is a two-in-one comfort food marvel. A savory, juicy meatloaf forms the base, topped with creamy, cheesy macaroni that’s baked until bubbly and golden. It’s a family favorite twist perfect for weeknight dinners or when you want to serve something unforgettable.

Ingredients

2 pounds ground beef (80/20 preferred)

0.5 cup breadcrumbs

0.25 cup milk

1 large egg

1 small onion, finely chopped

2 teaspoons Worcestershire sauce

1 teaspoon garlic powder

Salt and pepper to taste

2 cups cooked elbow macaroni

1.5 cups shredded cheddar cheese

0.5 cup whole milk

2 tablespoons butter

1 tablespoon flour

0.5 teaspoon paprika

Fresh parsley, chopped (for garnish)

Instructions

1. Preheat your oven to 375°F (190°C). In a large bowl, mix the ground beef, breadcrumbs, milk, egg, onion, Worcestershire sauce, garlic powder, salt, and pepper. Press the mixture into a loaf pan or shape it by hand on a lined baking sheet.

2. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk and continue stirring until thickened. Add cheddar cheese and paprika, stirring until melted and smooth.

3. Stir the cooked macaroni into the cheese sauce until fully coated. Keep warm.

4. After 30 minutes of baking, remove the meatloaf from the oven. Spoon the mac and cheese over the top, then return to the oven for an additional 10–15 minutes, until the top is bubbly and golden.

5. Let rest for 5 minutes before slicing. Garnish with fresh parsley and serve with a side salad or roasted veggies.

Notes

Use sharp cheddar for bold flavor or mix cheeses for variety.

Bake on a rack or drain the fat for a firmer meatloaf texture.

This dish makes amazing leftovers—try it in a sandwich the next day.
