Ingredients

1/4 cup tahini

2 tablespoons Dijon mustard

2 tablespoons maple syrup

2 tablespoons lemon juice

2 tablespoons water

1 small garlic clove, finely grated or minced

1/4 teaspoon sea salt

Fresh cracked black pepper, to taste


Instructions

1. In a small bowl or jar, whisk together the tahini, Dijon mustard, maple syrup, and lemon juice. The mixture will thicken at first.

2. Stir in the grated garlic, sea salt, and cracked black pepper.

3. Gradually add the water, whisking until the dressing becomes smooth and pourable. Add more water if needed.

4. Taste and adjust as desired—more lemon juice for brightness, maple syrup for sweetness, or mustard for extra tang.

Notes

If your tahini is thick or separated, stir it well before measuring.

This dressing may thicken in the fridge—just add a splash of water or lemon juice to loosen.
