Ingredients
500g chicken breast, cut into bite-sized pieces
3 tablespoons maple syrup
3 garlic cloves, minced
250g Brussels sprouts, halved
250g fettuccine or linguine pasta
1 cup heavy cream
1/2 cup Parmesan cheese, grated
2 tablespoons butter
2 tablespoons olive oil
1 tablespoon Cajun seasoning
Salt and pepper, to taste
Instructions
1. Trim and halve Brussels sprouts. Toss with olive oil, salt, and pepper. Roast at 425°F for 20–25 minutes until crispy.
2. Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
3. In a skillet, melt butter over medium heat. Add cream and simmer. Stir in Parmesan and Cajun seasoning. Adjust with pasta water if needed.
4. Season chicken pieces with salt and pepper. Sear in skillet with olive oil until golden and cooked through. Add garlic, sauté briefly, then drizzle maple syrup and stir to glaze.
5. Toss pasta with Cajun Alfredo sauce. Plate with chicken bites and roasted Brussels on top.
Notes
Make sure chicken pieces are uniform to cook evenly.
Don’t burn garlic — it becomes bitter quickly.
