Ingredients
3 medium sweet potatoes, peeled and cubed
3 tablespoons pure maple syrup
2 tablespoons olive oil
1 teaspoon ground cinnamon
0.5 teaspoon smoked paprika
0.25 teaspoon cayenne pepper (optional)
0.5 teaspoon sea salt
0.25 teaspoon black pepper
Instructions
1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a mixing bowl, combine maple syrup, olive oil, cinnamon, smoked paprika, cayenne (if using), salt, and pepper.
3. Add the sweet potato cubes and toss to coat well.
4. Spread them in a single layer on the baking sheet.
5. Roast for 25–30 minutes, flipping halfway, until edges are golden and centers are tender.
6. Serve warm or at room temperature.
Notes
Flip halfway through roasting for even caramelization.
