Ingredients
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup chopped maraschino cherries (drained and patted dry)
3/4 cup semi-sweet chocolate chips
Instructions
1. In a large mixing bowl, beat together the softened butter and granulated sugar until light and fluffy.
2. Mix in the egg, vanilla extract, and almond extract until fully combined.
3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients and stir until just combined.
4. Fold in the chopped maraschino cherries and chocolate chips.
5. Cover the dough and refrigerate for at least 30 minutes. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
6. Scoop tablespoon-sized portions onto the sheet, spacing 2 inches apart. Bake for 10-12 minutes or until the edges begin to turn golden.
7. Cool for 5 minutes on the sheet before transferring to a wire rack.
Notes
Be sure to pat cherries dry thoroughly to avoid soggy dough.
Chilling the dough is key to a good shape and texture—don’t skip it.
For a different twist, try swapping some chocolate chips for white chocolate.
