Description

Marinated Cucumbers, Onions, and Tomatoes is a refreshing salad recipe made with vinegar, sugar, and fresh vegetables. It’s the perfect cold side dish for summer barbecues or potlucks. Easy to prepare, tangy, and incredibly crisp, this Southern favorite is always a crowd-pleaser.

Ingredients

2 cucumbers

4 tomatoes

1 large onion

1 cup white vinegar

1 cup water

2 tablespoons granulated sugar

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons vegetable oil

Instructions

1. Wash and slice cucumbers into thin rounds. Cut tomatoes into wedges or thick slices. Thinly slice the onion.

2. In a large bowl, whisk together white vinegar, water, sugar, salt, pepper, and vegetable oil until sugar dissolves.

3. Add all the vegetables to the bowl and stir gently to coat everything evenly in the marinade.

4. Cover and refrigerate for at least 2 hours or overnight for deeper flavor.

5. Before serving, toss gently and serve chilled with a slotted spoon.

Notes

This salad is best made ahead and tastes even better the next day.

Use firm tomatoes to prevent sogginess in the mix.

Don’t skip the sugar—it balances out the vinegar for a rounded flavor.
