Ingredients

2 boneless, skinless chicken breasts (sliced)

2 cups penne pasta (or pasta of choice)

2 tablespoons olive oil

3 cloves garlic (minced)

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

½ cup sun-dried tomatoes (chopped)

1 cup heavy cream

½ cup chicken broth

½ cup grated parmesan cheese

½ teaspoon salt (or to taste)

¼ teaspoon black pepper (or to taste)

¼ cup fresh basil (chopped)


Instructions

  1. Cook the Pasta: Boil salted water and cook the penne pasta until al dente. Drain and set aside, reserving ½ cup of pasta water.
  2. Sear the Chicken: Heat olive oil in a skillet over medium-high heat. Season the chicken with salt, pepper, and Italian seasoning. Cook for 4-5 minutes per side until golden brown. Remove and set aside.
  3. Prepare the Sauce: In the same skillet, sauté garlic and red pepper flakes for 30 seconds. Add sun-dried tomatoes and cook for another minute. Pour in chicken broth, scraping the pan’s bottom, and let it simmer for 2 minutes.
  4. Make It Creamy: Reduce heat and add heavy cream, stirring to combine. Let simmer for 2-3 minutes until slightly thickened. Stir in parmesan cheese, allowing it to melt. Adjust consistency with reserved pasta water if needed.
  5. Combine Everything: Return the cooked chicken and pasta to the skillet. Toss well to coat with sauce and let cook for another minute.
  6. Garnish and Serve: Remove from heat, stir in fresh basil, and adjust seasoning. Serve warm with extra parmesan and basil on top.
