Ingredients
2 large boneless, skinless chicken breasts (halved lengthwise)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)
1 teaspoon garlic powder
1/2 teaspoon paprika
2 tablespoons olive oil
3 cloves garlic, minced
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated parmesan cheese
1/2 cup sun-dried tomatoes (chopped)
1 teaspoon Italian seasoning
1/2 teaspoon dried oregano
Fresh basil or parsley for garnish
Instructions
- Slice the chicken breasts in half lengthwise to create thin cutlets. Season with salt, pepper, red pepper flakes, garlic powder, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown and cooked through. Remove from the pan and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Pour in chicken broth, scraping up any browned bits. Simmer for 1 minute.
- Reduce heat to medium-low and stir in heavy cream, parmesan cheese, sun-dried tomatoes, Italian seasoning, and oregano. Let the sauce simmer for 2-3 minutes until slightly thickened.
- Return the chicken to the pan, spooning sauce over it. Let it simmer for another 5 minutes to absorb flavors.
- Turn off heat and garnish with fresh basil or parsley. Serve warm with pasta, rice, or bread.
