Ingredients
1 lb linguine or fettuccine pasta
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
3 tbsp butter
4 cloves garlic, minced
1 tsp red pepper flakes
1/2 cup sun-dried tomatoes, chopped
1 cup heavy cream
1/2 cup chicken broth
3/4 cup grated Parmesan cheese
Salt and black pepper to taste
Fresh basil or parsley, chopped for garnish
Instructions
1. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup pasta water, drain, and set aside.
2. In a skillet, heat olive oil and 1 tbsp butter. Cook shrimp 2–3 minutes per side until pink. Remove and set aside.
3. Add remaining butter to the skillet. Sauté garlic and red pepper flakes for 1 minute. Stir in sun-dried tomatoes and cook another minute.
4. Pour in chicken broth and cream. Simmer 3–5 minutes until slightly thickened. Stir in Parmesan until melted.
5. Add pasta and toss to coat. Use reserved pasta water if needed. Return shrimp to pan and stir.
6. Season with salt and pepper. Garnish with fresh herbs and serve hot.
Notes
Use freshly grated Parmesan for the smoothest sauce.
Don’t overcook the shrimp—remove as soon as they turn pink.
Add a splash of white wine with the garlic for added depth.
