Ingredients
2 chicken breasts
1 cup orzo pasta
1 cup heavy cream
2 cups chicken broth
2 tablespoons olive oil
1 small onion diced
2 cloves garlic minced
1 tablespoon fresh parsley chopped
1 teaspoon fresh thyme chopped
1 tablespoon lemon juice
salt to taste
black pepper to taste
Instructions
1. Heat olive oil in a skillet over medium-high heat. Season chicken breasts with salt and pepper, sear on both sides until golden and cooked through. Remove from skillet.
2. In the same skillet, sauté diced onion and minced garlic until translucent.
3. Stir in orzo and toast lightly for about 1 minute.
4. Pour in chicken broth, bring to a simmer, and cook orzo until tender and most liquid is absorbed.
5. Lower heat, stir in heavy cream, and return chicken to skillet. Cook for 2–3 more minutes.
6. Sprinkle parsley and thyme, drizzle lemon juice, adjust seasoning, and serve hot.
Notes
Use whole wheat orzo for added fiber.
Don’t skip the lemon—it balances the richness perfectly.
Leftovers reheat better with an extra splash of broth or cream.
