Ingredients
500 g ground beef 8 flour tortillas 2 cups shredded cheese 2 cups enchilada sauce 1 cup black beans 1 cup corn 1 medium onion, diced 2 cloves garlic, minced 2 tablespoons taco seasoning 2 tablespoons fresh cilantro, chopped
Instructions
1. In a skillet over medium heat, sauté diced onion and minced garlic until fragrant. Add ground beef and cook until browned, then stir in taco seasoning, black beans, and corn. Remove from heat. Preheat oven to 350°F. Spread a thin layer of enchilada sauce in a 9×13-inch baking dish. Place a layer of tortillas over the sauce, then add a portion of beef mixture, more sauce, and cheese. Repeat layers, finishing with cheese. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly. Let cool slightly, garnish with cilantro, slice, and serve.
