Ingredients

2 lbs baby potatoes (quartered)

3 tbsp olive oil

1 tsp paprika

1 tsp chili powder

1 tsp garlic powder

1 tsp cumin

1/2 tsp oregano

1/2 tsp salt (adjust to taste)

1/2 tsp black pepper

Fresh cilantro, chopped (for garnish)


Instructions

  1. Prepare the Potatoes: Wash and quarter the baby potatoes. Pat them dry with a kitchen towel.
  2. Season the Potatoes: In a large mixing bowl, combine olive oil, paprika, chili powder, garlic powder, cumin, oregano, salt, and black pepper. Toss the potatoes in the seasoning mix until well coated.
