Ingredients
1 cup unsalted butter, softened
0.5 cup powdered sugar
0.5 teaspoon peppermint extract
1 teaspoon vanilla extract
2.25 cups all-purpose flour
0.5 teaspoon salt
0.75 cup mini chocolate chips
Optional: 1–2 drops green food coloring
Extra powdered sugar, for rolling
Instructions
1. Cream together the softened butter and powdered sugar until light and fluffy.
2. Mix in the peppermint and vanilla extract. Add green food coloring if using.
3. Gradually stir in flour and salt until a soft, crumbly dough forms.
4. Fold in the mini chocolate chips evenly.
5. Shape dough into 1-inch balls and place on a parchment-lined baking sheet. Chill for at least 30 minutes.
6. Preheat oven to 350°F (175°C). Bake for 10–12 minutes, until set but not browned.
7. While warm, roll cookies in powdered sugar. Let cool, then roll again for a snowy finish.
Notes
These cookies don’t spread much, so you can space them closer on the baking sheet.
Double the peppermint for an extra icy bite.
Roll twice in sugar for that perfect snow-dusted look.
