1 cup sour cream
1 can (10 oz) Rotel, drained
1/2 cup BBQ sauce
6 slices bacon, cooked and crumbled
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
Instructions
1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Drain and set aside.
2. In a large bowl, mix together cream of chicken soup, sour cream, BBQ sauce, drained Rotel, garlic powder, onion powder, salt, and pepper.
3. Stir in the shredded chicken and 1.5 cups of the Monterey Jack cheese.
4. Add the cooked spaghetti and toss to coat everything evenly.
5. Pour the mixture into a greased baking dish and top with remaining cheese and crumbled bacon.
6. Bake at 350°F for 25–30 minutes until bubbling and golden.
7. Let it sit for a few minutes before serving to allow the sauce to thicken slightly.
Notes
Always drain the Rotel to avoid a watery casserole.
Use well-seasoned or leftover grilled chicken for extra flavor.
Let the baked casserole sit before serving for better texture.
