Description

Crispy on the outside, tender on the inside, these Mustard Potato Poppers are a bold and flavorful side or snack. Coated in Dijon and whole grain mustard, then roasted until golden, they’re perfect for dipping, sharing, or serving alongside your favorite dishes.


Ingredients

1.5 pounds baby potatoes

2 tablespoons olive oil

2 tablespoons Dijon mustard

1 tablespoon whole grain mustard

1 teaspoon garlic powder

1 teaspoon onion powder

0.5 teaspoon smoked paprika

1 teaspoon salt

black pepper to taste

1 tablespoon fresh parsley (optional)


Instructions

1. Wash and dry the baby potatoes thoroughly, then cut them in half.

2. In a large bowl, mix olive oil, Dijon mustard, whole grain mustard, garlic powder, onion powder, smoked paprika, salt, and black pepper.

3. Toss the halved potatoes in the mustard mixture until evenly coated.

4. Preheat oven to 425°F (220°C). Spread potatoes cut side down on a parchment-lined baking sheet.

5. Roast for 25–30 minutes or until crisp and golden brown.

6. Garnish with fresh parsley and serve immediately.

Notes

For added heat, mix in a pinch of cayenne or crushed red pepper.

Use parchment paper for even browning and easy cleanup.

These reheat best in an air fryer or oven—not the microwave.
