A nostalgic, creamy no-bake cheesecake inspired by the classic Woolworth lunch counter dessert. With a bright lemony filling, whipped evaporated milk, and a buttery graham cracker crust—this dessert is both vintage and timeless.
Ingredients
1 (3 oz) package lemon Jell-O
1 cup boiling water
1 (8 oz) package cream cheese, softened
1 cup granulated sugar
5 tablespoons lemon juice
1 can (12 oz) evaporated milk, well chilled
1 1/2 cups graham cracker crumbs
1/4 cup melted butter
1 tablespoon granulated sugar
Instructions
1. Mix graham cracker crumbs, melted butter, and 1 tablespoon sugar in a bowl. Press most into a 9×13 inch dish to form crust. Chill the crust.
2. Dissolve lemon Jell-O in boiling water and let it cool to room temperature.
3. In a chilled bowl, whip evaporated milk until fluffy (about 3-5 minutes).
4. In another bowl, beat cream cheese, 1 cup sugar, and lemon juice until smooth. Stir in cooled Jell-O.
5. Gently fold the whipped milk into the cream cheese mixture. Pour onto the crust and smooth the top.
6. Sprinkle reserved crumbs over the top. Chill for at least 4 hours until set.
Notes
Use very cold evaporated milk to achieve a stable whipped texture.
Let Jell-O cool but not set before adding to the cream cheese mixture.
Chill overnight for the best structure and flavor development.
