Ingredients
8 oz cream cheese, softened
1 cup creamy peanut butter
1/2 cup powdered sugar
1 tsp vanilla extract
1 1/2 cups crushed graham crackers
1 1/2 cups semi-sweet chocolate chips
1 tbsp coconut oil
Sea salt or crushed peanuts for garnish
Instructions
1. In a large bowl, beat the softened cream cheese and peanut butter together until smooth.
2. Add the powdered sugar and vanilla extract, mixing until fully combined.
3. Stir in the crushed graham crackers until the mixture thickens and holds its shape.
4. Scoop out small portions (about 1 tablespoon) and roll into balls. Refrigerate for at least 1 hour or freeze for 20–30 minutes.
5. Melt chocolate chips with coconut oil in the microwave, stirring every 30 seconds until smooth.
6. Dip each ball in the melted chocolate and place on parchment paper. Garnish with sea salt or crushed peanuts.
7. Chill until chocolate is set. Store in the fridge in an airtight container for up to 7 days.
Notes
Keep the cheesecake balls chilled for best texture.
Use creamy peanut butter for a smooth consistency, or mix in crunchy for texture.
Let the chocolate cool slightly before dipping to prevent cracking.
