Ingredients
2 cups shredded sweetened coconut
1 cup soft caramels
2 tablespoons heavy cream
1 ½ cups crushed shortbread cookies
4 tablespoons unsalted butter melted
1 cup semi sweet chocolate chips
1 teaspoon vanilla extract
Pinch salt
Instructions
1. Toast shredded coconut in a skillet over medium heat, stirring constantly until golden. Cool completely.
2. Mix crushed shortbread cookies with melted butter until crumbly but holds when pressed. Shape into small flat cookie rounds.
3. Melt caramels with heavy cream in short microwave bursts, stirring until smooth.
4. Stir toasted coconut, vanilla, and salt into melted caramel until evenly coated.
5. Press coconut caramel mixture onto each cookie base.
6. Melt chocolate chips until smooth. Dip cookie bottoms in chocolate and drizzle chocolate over tops.
7. Place cookies on parchment paper and chill until chocolate is set.
Notes
Use fresh soft caramels for smoother melting and better texture.
Toast coconut carefully because it burns quickly once golden.
Chilling the cookies briefly helps the chocolate set faster and keeps layers firm.
