Description

Old-Fashioned Bologna Salad is a creamy, retro-style spread made with chopped bologna, sweet pickles, and hard-boiled eggs. Perfect for sandwiches, crackers, or celery sticks, this nostalgic dish is simple to make and packed with flavor.


Ingredients

1 pound bologna, thick-sliced

1/2 cup mayonnaise

2 tablespoons yellow mustard

1/4 cup sweet pickle relish

2 tablespoons finely diced onion

2 hard-boiled eggs, chopped

Salt and pepper to taste


Instructions

1. Cut the thick-sliced bologna into chunks and pulse in a food processor until finely chopped but not pureed.

2. In a large bowl, combine mayonnaise, mustard, and sweet pickle relish. Stir until smooth and creamy.

3. Add the chopped bologna, diced onion, and hard-boiled eggs to the bowl. Gently fold together until fully coated.

4. Taste and adjust with salt and pepper. Cover and refrigerate for at least 1 hour before serving.
