This One Pan Chicken and Potatoes with Gravy is the ultimate comfort meal made easy. Tender seared chicken thighs, golden potatoes, and a savory homemade gravy all come together in one skillet—perfect for weeknight dinners or meal prep.
Ingredients
4 bone-in, skin-on chicken thighs
1.5 lbs Yukon Gold or baby red potatoes, halved or quartered
2 tablespoons olive oil
Salt and pepper to taste
1 teaspoon garlic powder
1 teaspoon onion powder
0.5 teaspoon smoked paprika
1 tablespoon butter
2 tablespoons all-purpose flour
2 cups chicken broth
1 teaspoon fresh thyme or 0.5 teaspoon dried thyme
Chopped parsley for garnish (optional)
Instructions
1. Pat the chicken thighs dry and season both sides with salt, pepper, garlic powder, onion powder, and smoked paprika.
2. Heat olive oil in a large skillet over medium-high heat. Sear chicken skin-side down for 5–6 minutes until golden, then flip and cook for 3–4 more minutes. Remove from pan.
3. Add potatoes to the same pan and season with salt and pepper. Cook for 5–7 minutes until slightly browned.
4. Push potatoes to the side. Melt butter in the center and whisk in flour. Cook 1 minute to form a roux. Gradually whisk in chicken broth until smooth.
5. Stir in thyme. Nestle chicken back into the skillet. Cover and simmer on medium-low for 25–30 minutes until chicken is fully cooked (165°F).
6. Uncover and simmer a few more minutes to thicken gravy if needed. Garnish with parsley and serve hot.
Notes
This recipe works best with bone-in, skin-on chicken for extra flavor.
For crispier skin, remove the lid during the last 5 minutes of cooking.
Add carrots or green beans during simmering for a veggie boost.
