Description

This One Pan Sausage Green Beans and Potatoes recipe is a rustic, comforting, and easy weeknight dinner made with smoky sausage, crisp green beans, and tender baby potatoes all roasted together with simple seasonings.


Ingredients

1 lb smoked sausage, sliced into rounds

1 lb baby potatoes, halved

1 lb fresh green beans, trimmed

3 tbsp olive oil

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

1 tbsp chopped fresh parsley (optional)


Instructions

1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.

2. In a large bowl, toss the sausage, potatoes, and green beans with olive oil, garlic powder, onion powder, paprika, salt, and pepper.

3. Spread mixture on the baking sheet in a single layer.

4. Roast for 30–35 minutes, flipping halfway through, until potatoes are tender and golden.

5. Remove from oven, garnish with fresh parsley if using, and serve hot.

Notes

Cut potatoes small for quicker cooking.

Add mushrooms or bell peppers for extra flavor.

Use turkey sausage for a leaner version.
