Ingredients

8 oz linguine

1 lb chicken breast or thighs, sliced

1 ½ tbsp Cajun seasoning

4 garlic cloves, minced

2 tbsp butter

1 tbsp olive oil

1 ¼ cup heavy cream

1 ½ cups chicken broth

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

Salt and pepper to taste

2 tbsp chopped fresh parsley


Instructions

1. Season the chicken with Cajun seasoning generously on all sides.

2. Heat butter and olive oil in a large deep skillet or pot.

3. Sear the chicken until golden brown and cooked through. Remove and set aside.

4. In the same pot, sauté minced garlic for 1 minute until fragrant.

5. Add chicken broth and heavy cream. Stir and bring to a simmer.

6. Add linguine, ensuring it’s submerged in the liquid. Cook, stirring occasionally until al dente.

7. Reduce heat and stir in mozzarella and Parmesan until melted and sauce is creamy.

8. Return chicken to the pot, mix everything, and let simmer for 2–3 minutes.

9. Adjust salt and pepper as needed.

10. Garnish with parsley and serve hot.

Notes

Use fresh pasta for quicker cook time.

Leftovers reheat well with a splash of cream.
