This One Pot Creamy Cajun Sausage Pasta is rich, spicy, and unbelievably simple to make. With andouille sausage, creamy sauce, bold Cajun spices, and pasta all cooked in a single pot, it’s a flavor-packed dish perfect for busy weeknights or indulgent weekends.
Ingredients
1 tablespoon olive oil
1 pound smoked andouille sausage, sliced
1 small yellow onion, diced
3 cloves garlic, minced
2 teaspoons Cajun seasoning
1/2 teaspoon paprika
1/4 teaspoon black pepper
2 1/2 cups chicken broth
1 cup heavy cream
8 ounces penne pasta
1 cup shredded Parmesan cheese
1/2 cup diced tomatoes (optional)
Fresh parsley, chopped (for garnish)
Instructions
1. Heat olive oil in a large skillet over medium heat. Add sliced sausage and brown for 4–5 minutes.
2. Add diced onion and cook until translucent. Stir in garlic and cook for 30 seconds.
3. Sprinkle in Cajun seasoning, paprika, and pepper. Stir to coat the sausage mixture.
4. Pour in chicken broth and heavy cream. Bring to a gentle boil.
5. Add the uncooked penne pasta, stir well, and reduce to a simmer. Cover and cook 12–14 minutes.
6. Stir occasionally to prevent sticking. Cook until pasta is tender and liquid mostly absorbed.
7. Stir in Parmesan and diced tomatoes, cooking 1–2 minutes until the cheese melts.
8. Remove from heat and garnish with parsley. Serve hot.
Notes
Use kielbasa or Italian sausage if andouille is unavailable.
For a lighter version, swap heavy cream with half-and-half.
Add veggies like bell peppers or spinach during the sauté step.
