This One Pot Creamy Garlic Parmesan Chicken Penne is a quick and cozy pasta dinner made in under 30 minutes with juicy chicken, Parmesan cheese, and garlic-infused cream sauce. A perfect one-pan comfort food recipe for weeknight meals or indulgent leftovers.
Ingredients
2 chicken breasts
1 tablespoon olive oil
4 cloves garlic, minced
3 cups chicken broth
1 ½ cups heavy cream
1 cup grated Parmesan cheese
12 ounces penne pasta
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot or deep skillet. Season chicken with salt and pepper, then sear until golden brown and cooked through. Remove and set aside.
2. In the same pot, add a bit more oil if needed and sauté the minced garlic until fragrant. Be careful not to burn it.
3. Pour in the chicken broth and bring to a simmer. Stir in the penne and cook, stirring occasionally, until the pasta is al dente and most of the broth is absorbed.
4. Lower the heat and stir in the heavy cream. Add the cooked chicken back in along with grated Parmesan cheese. Stir gently until the cheese melts and the sauce thickens.
5. Finish with chopped fresh parsley and more Parmesan if desired. Serve hot and enjoy the comfort.
Notes
Use freshly grated Parmesan for best melting and flavor.
Stir the pasta occasionally while cooking to prevent sticking.
Reheat leftovers with a splash of milk or cream to keep the sauce creamy.
