This One Pot Lasagna Soup captures all the flavors of classic lasagna—rich tomato sauce, savory meat, tender noodles, and creamy cheese—in a cozy, comforting bowl that’s easy to whip up any night of the week. It’s hearty, delicious, and only uses one pot for easy cleanup.
Ingredients
1 lb ground beef (or Italian sausage)
1 tablespoon olive oil
1 small onion, diced
3 garlic cloves, minced
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes (optional)
1 tablespoon tomato paste
1 can (28 oz) crushed tomatoes
4 cups beef broth
8 lasagna noodles, broken into pieces
Salt and black pepper, to taste
1/2 cup heavy cream (optional)
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Ricotta cheese, for topping
Fresh basil or parsley, for garnish
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion and cook until soft.
2. Stir in garlic, Italian seasoning, and red pepper flakes. Cook until fragrant.
3. Add ground beef and brown until no longer pink. Drain excess fat if needed.
4. Stir in tomato paste and cook for 1 minute. Add crushed tomatoes and beef broth. Bring to a boil.
5. Add broken lasagna noodles. Simmer 10–12 minutes, stirring occasionally.
6. Stir in heavy cream if using. Add mozzarella and Parmesan until melted.
7. Serve hot topped with ricotta and herbs.
Notes
Use sausage for extra depth of flavor.
Add spinach or zucchini for a veggie boost.
To freeze, store without noodles and add fresh ones when reheating.
