Ingredients
1 1/2 pounds boneless skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
2 tablespoons olive oil
2 tablespoons unsalted butter
4 cloves garlic minced
1 cup low sodium chicken broth
1/4 cup heavy cream
3 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 tablespoon honey
1 tablespoon chopped fresh parsley
4 lemon slices
Instructions
1. Pat the chicken dry with paper towels, then season both sides with salt, black pepper, garlic powder, and paprika.
2. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken for 4 to 5 minutes per side until golden brown, then transfer it to a plate.
3. Reduce the heat to medium and add the butter to the same skillet. Stir in the minced garlic and cook for about 30 seconds until fragrant.
4. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan.
5. Stir in the heavy cream, Dijon mustard, lemon juice, lemon zest, and honey until the sauce is smooth.
6. Return the chicken to the skillet along with any juices from the plate. Add the lemon slices and spoon some sauce over the top.
7. Simmer over medium-low heat for 6 to 8 minutes, or until the chicken is cooked through and the sauce has slightly thickened.
8. Sprinkle with chopped parsley and serve warm with your favorite side dish.
