Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
¾ cup orange juice
½ cup vegetable oil
2 large eggs
1 tablespoon orange zest
1 ½ cups fresh or frozen cranberries
1 teaspoon vanilla extract (optional)
½ cup powdered sugar (for glaze, optional)
1 to 2 tablespoons orange juice (for glaze, optional)
Instructions
1. Preheat oven to 350°F (175°C) and grease or line a 9×5-inch loaf pan.
2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
3. In a separate bowl, whisk orange juice, oil, eggs, orange zest, and vanilla (if using).
4. Combine wet and dry ingredients just until no dry flour remains.
5. Gently fold in cranberries without overmixing.
6. Pour batter into prepared pan and smooth the top.
7. Bake for 50 to 60 minutes, until a toothpick inserted in the center comes out clean.
8. Cool in pan for 10 minutes, then transfer to a wire rack.
9. If using glaze, whisk powdered sugar with orange juice and drizzle over cooled loaf.
Notes
Dust cranberries with flour before folding in to prevent sinking.
Fresh orange juice and zest offer the best flavor.
Store in an airtight container or freeze for long-term enjoyment.
