Description

This oven-roasted Cajun chicken and garlic potatoes with parmesan is the perfect weeknight dinner. Juicy Cajun-spiced chicken and crispy garlic baby potatoes roasted on one sheet pan with a cheesy parmesan finish. Easy, bold, and family-approved.


Ingredients

6 bone-in skin-on chicken thighs or drumsticks

1.5 pounds baby potatoes

3 tablespoons olive oil

1.5 tablespoons Cajun seasoning

4 garlic cloves, minced

0.5 cup freshly grated parmesan cheese

0.5 teaspoon salt

0.25 teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Preheat your oven to 425°F. Line a large baking sheet with parchment paper or foil.

2. In a large bowl, toss the chicken with 1 tablespoon olive oil, Cajun seasoning, salt, and pepper.

3. In a separate bowl, toss halved baby potatoes with 2 tablespoons olive oil, minced garlic, salt, and pepper.

4. Arrange potatoes on one side of the sheet pan and chicken skin-side up on the other, leaving space between pieces.

5. Roast for 35 to 45 minutes until chicken reaches 165°F and potatoes are crispy and fork-tender.

6. Sprinkle potatoes with grated parmesan and return to oven for 3 to 5 minutes to melt.

7. Garnish with chopped parsley and serve hot.

Notes

Dry chicken skin well before seasoning for crispy texture.

Don’t overcrowd the pan—space helps ingredients roast properly.

Add extra parmesan in the final minutes for a golden crust.
