Crispy on the outside and creamy inside, these Parmesan Roasted Red Potatoes are the perfect side dish. With a savory Parmesan crust and simple herbs, they’re quick to prep and roast to golden perfection.
Ingredients
2 pounds baby red potatoes, halved or quartered
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley (optional)
Instructions
1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
2. In a large bowl, combine the halved red potatoes with olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss until evenly coated.
3. Sprinkle the grated Parmesan over the potatoes and toss again to distribute the cheese well.
4. Arrange the potatoes cut side down on the prepared baking sheet in a single layer. Bake for 30 to 35 minutes, or until the bottoms are golden and crispy and the insides are fork-tender.
5. Remove from oven, sprinkle with fresh parsley if using, and serve immediately while hot and crispy.
Notes
For extra crispiness, don’t overcrowd the pan.
Use freshly grated Parmesan—not the pre-packaged kind—for better flavor and texture.
Flip halfway through roasting for even browning if needed.
