Description
These Peppermint Mocha Pudding Parfaits combine rich chocolate espresso pudding with fluffy peppermint cream for a festive no-bake dessert. Perfect for holiday gatherings or a cozy night in, each spoonful is indulgent, minty, and utterly satisfying.
Ingredients
1 box (3.9 oz) chocolate instant pudding mix
2 cups cold milk
1 tablespoon instant espresso powder or 2 tablespoons brewed espresso
1 cup heavy whipping cream
2 tablespoons powdered sugar
1/2 teaspoon peppermint extract
4 crushed peppermint candy canes
Whipped topping or additional whipped cream (optional)
Chocolate shavings or mini chocolate chips (optional)
Instructions
1. In a large mixing bowl, whisk together the chocolate pudding mix and cold milk.
2. Add in the espresso powder or brewed espresso and mix until smooth and thickened. Let it chill in the fridge for 10 minutes.
3. In a separate bowl, beat the heavy whipping cream, powdered sugar, and peppermint extract until stiff peaks form.
4. Gently fold in the crushed peppermint candy canes.
5. Begin layering your parfaits with pudding at the base, followed by peppermint cream. Repeat layers as desired.
6. Add whipped topping or extra cream in between if using.
7. Top with additional crushed candy canes and chocolate shavings.
8. Chill for at least 30 minutes before serving.
Notes
Use decaf espresso if serving to kids.
Layer in clear glasses for a festive look.
