Description

These Peppermint White Chocolate Scones bring together buttery tenderness with cool peppermint and rich white chocolate chips. Crisp on the edges, soft in the center, they make for a festive treat perfect for winter mornings, holiday brunches, or cozy desserts.


Ingredients

2 cups all-purpose flour

0.5 cup granulated sugar

1 tablespoon baking powder

0.5 teaspoon salt

0.5 cup unsalted butter (cold, cut into cubes)

0.5 cup heavy cream (plus more for brushing)

1 large egg

0.5 teaspoon peppermint extract

1 teaspoon vanilla extract

0.75 cup white chocolate chips

Crushed peppermint candies (optional, for topping)


Instructions

1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

2. Add the cold butter cubes to the flour mixture. Use a pastry cutter or your fingers to work the butter in until the mixture resembles coarse crumbs.

3. In a small bowl, whisk together the heavy cream, egg, peppermint extract, and vanilla extract.

4. Pour the wet mixture into the dry ingredients and stir just until combined. Fold in the white chocolate chips gently.

5. Turn the dough out onto a lightly floured surface. Pat into a 1-inch thick circle. Cut into 8 wedges and place on a parchment-lined baking sheet. Chill in the fridge for 15–20 minutes.

6. Preheat oven to 400°F (200°C). Brush the tops of the scones with cream and sprinkle with crushed peppermint if using. Bake for 16–18 minutes or until golden around the edges.

Notes

Keep your butter cold and handle the dough as little as possible for a flaky texture.

Chilling the dough before baking helps the scones rise and maintain shape.

Add a white chocolate drizzle after baking for extra sweetness and presentation.
