Description

Pineapple Chicken Kabobs are the perfect summer dinner—grilled juicy chicken and caramelized pineapple chunks with bell peppers in a tangy-sweet marinade. Ideal for BBQs, quick dinners, and tropical-themed meals.


Ingredients

450g chicken thighs

250g pineapple chunks

1 red bell pepper

1 green bell pepper

60ml soy sauce

2 tbsp honey

2 garlic cloves, minced

1 tsp grated ginger

1 tsp sesame oil

1 tbsp lime juice

2 tbsp olive oil


Instructions

1. Whisk soy sauce, honey, garlic, ginger, sesame oil, lime juice, and olive oil in a bowl.

2. Cut chicken into chunks and marinate in the sauce for 30 minutes to 4 hours.

3. Soak wooden skewers. Thread chicken, pineapple, and peppers onto skewers.

4. Preheat grill to medium-high and lightly oil grates.

5. Grill kabobs 10-12 minutes, turning occasionally, until chicken is cooked and edges are charred.

6. Let rest a few minutes, then serve hot with rice, flatbread, or fresh lime.

Notes

Use chicken thighs for juicier kabobs.

Don’t skip soaking the skewers if using wood.

Marinate longer for deeper flavor.
