Description

Pistachio Crusted Chicken Breast is a healthy, flavorful chicken dinner idea that combines juicy chicken with a crunchy pistachio coating. Easy, gluten-free, and perfect for weeknights or special occasions.


Ingredients

100 g pistachios

4 chicken breasts

1 egg

1 tsp garlic powder

to taste salt & pepper

2 tbsp olive oil


Instructions

1. Shell the pistachios and crush them into fine crumbs using a rolling pin or a food processor. Transfer to a shallow dish.

2. Pat the chicken breasts dry and season both sides with salt, pepper, and garlic powder.

3. Beat the egg in a shallow bowl. Dip each chicken breast into the egg, then press into the crushed pistachios, making sure each piece is fully coated.

4. Heat olive oil in a skillet over medium heat. Sear the chicken breasts for 2–3 minutes per side until golden, then transfer to a baking sheet and bake at 375°F (190°C) for 15–20 minutes, or until the internal temperature reaches 165°F.

5. Allow the chicken to rest for 5 minutes before slicing and serving.

Notes

Do not over-crush the pistachios; keep some texture for a crisp crust.

Use a thermometer to ensure the chicken reaches 165°F.
