Description

Ingredients

250 g mascarpone cheese

200 ml heavy cream

24 ladyfingers

100 g pistachios (ground, plus extra for garnish)

250 ml milk

50 g powdered sugar

1 tsp vanilla extract


Instructions

1. Prepare the pistachio milk by heating milk and stirring in ground pistachios. Let steep 15 minutes, strain, and cool.

2. In a bowl, beat mascarpone with powdered sugar and vanilla. In another bowl, whip heavy cream to stiff peaks and fold gently into mascarpone mixture. Stir in a handful of ground pistachios.

3. Dip ladyfingers quickly into cooled pistachio milk and layer them in a dish. Spread half the mascarpone cream over. Repeat with another layer of ladyfingers and the rest of the cream.

4. Garnish with crushed pistachios. Cover and refrigerate at least 4 hours or overnight.

5. Slice, serve chilled, and enjoy.

Notes

Use unsalted, shelled pistachios for the best color and flavor.

Don’t oversoak ladyfingers or they’ll get soggy.
