Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup granulated sugar
1/2 cup unsalted butter melted
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup maraschino cherries drained and chopped
1/4 cup sliced almonds
Instructions
1. Preheat oven to 350°F (175°C) and grease or line a loaf pan.
2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
3. In another bowl, mix sugar and melted butter until smooth.
4. Add eggs one at a time, mixing well after each addition.
5. Stir in milk, vanilla extract, and almond extract.
6. Gradually combine dry ingredients into the wet mixture until just incorporated.
7. Fold in chopped cherries and sliced almonds gently.
8. Pour batter into prepared pan and smooth the top.
9. Bake for 45–55 minutes or until a toothpick inserted comes out clean.
10. Cool in pan for 10 minutes, then transfer to a rack to cool completely before slicing.
Notes
Toss cherries lightly in flour before adding to prevent sinking.
Do not overmix the batter to keep the bread soft and tender.
Add a simple almond glaze on top for extra sweetness and presentation.
