Ingredients
1 lb ground turkey (93% lean)
0.5 cup breadcrumbs
0.25 cup grated Parmesan cheese
0.25 cup ketchup
1 large egg
2 tablespoons finely chopped onion
1 teaspoon garlic powder
1 teaspoon Italian seasoning
0.5 teaspoon salt
0.25 teaspoon black pepper
olive oil spray (for muffin tin)
Instructions
1. Lightly grease a 12-cup muffin tin with olive oil spray or line with silicone muffin cups. Preheat oven to 375°F (190°C).
2. In a large bowl, combine the ground turkey, breadcrumbs, Parmesan, ketchup, egg, onion, garlic powder, Italian seasoning, salt, and pepper. Mix gently until just combined.
3. Divide the mixture evenly into the muffin cups, pressing lightly to shape. Top each with a small dollop of ketchup.
4. Bake for 20–25 minutes or until internal temperature reaches 165°F.
5. Let rest for 5 minutes before removing from the pan. Use a spoon to gently lift them out.
Notes
Use lean (93%) ground turkey for best results—moist but not greasy.
You can mix in grated zucchini or carrot for extra moisture and nutrition.
These muffins freeze well—cool completely, then store in a freezer-safe bag.
